Dritan and his team are extremely proud of their facilities and approach to preparing food; in fact, Dritan would love to welcome anyone into the kitchen to see how everything is prepared. Food is sourced locally where possible, such as the escargot from reliable suppliers Aylesbury Escargots. A list of the main suppliers we use is here.
The kitchen houses a smoker which uses carefully chosen woods to provide one of 10 perfect flavours, including Cherrywood for duck, Hay for mackerel and a combination of Maple and Earl Grey for cod fish. The skilful chefs are able to prepare everything they serve freshly to order and insist on preparing, curing and smoking all of the food in the kitchen.
The team don’t believe in cutting corners and some dishes take up to a week to prepare, but the end result is always simple - a beautifully prepared dish that guests will appreciate has been made with honesty.
